Peanut Butter Oatmeal Chocolate Chunk Cookies


This recipe from Kraft Kitchens
Yum! I think my Cookie Monster will aprove ;)

1 C. Flour
1 C. old-fashioned or quick-cooking Oats
1/2 t. Baking Soda
1/2 t. Baking Powder
1/4 t. Salt
1/2 C. (1 stick) Butter
1/2 C. granulated Sugar
1/2 C. Brown Sugar
1/2 C. Peanut Butter
1 Egg
1-1/2 t. Vanilla
6 squares Semi Sweet Baking Chocolate, coarsely chopped

Preheat oven to 375 degrees F. Mix flour, oats, baking soda, baking powder & salt; set aside. Beat butter, sugars and peanut butter in large bowl with electric mixer on medium speed until light & fluffy. Add egg and vanilla; mix well. Gradually add flour mixture, mixing until well blended after each addition. Stir in chocolate.
Drop heaping tablespoonfuls of dough, 2" apart, onto ungreased baking sheets.
Bake 10-12 minutes or until lightly golden brown. Cool 1 minute; remove from baking sheets to wire racks. Cool completely.

Makes about 2-1/2 dozen cookies
