Sunflower Seed Bread

INGREDIENTS:
2-1/2 Cups All-Purpose Flour
2-1/2 Cups Whole Wheat Flour
1 Cup salted Sunflower kernals, toasted
2 packages (1/4 oz each) Active Dry Yeast
2 t. Salt
1-1/4 Cups Water
1/2 Cup Milk
1/3 Cup Honey
3 T. Butter
Additional Sunflower seeds optional

DIRECTIONS: In a mixing bowl combine 1 cup of each flour, sunflower kernals, yeast and salt; set aside.
In a saucepan, heat the water, milk honey and butter to 120-130 degrees.
Add to dry ingrediants; beat until smooth.
Stir in remaining flours, a little at a time, to form a soft dough.
Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.
Place in greased bowl, turning once to grease top.
Cover and let rise in warm place until double, about 1 hour.
Punch dough down.
Turn onto a lightly floured surface; divide in 1/2.
Shape into loaves.
Roll loaves in additional sunflower kernals if desired.
Place in 2 greased 8"x4"x2" loaf pans.
Cover and let rise until doubled, about 45 minutes.

Bake: at 375 degrees for 30-35 minutes or until golden brown.
Remove from pans to wire racks to cool.

Yield: 2 Loaves

Note: Original recipe called for 4 cups all-purpose flour and only 1 cup of whole wheat flour.
I made the bread with 1/2 each, all-purpose and whole wheat flour and it is delicious and a tad more healthy this way :)

RECIPE BACKSTORY: This recipe from TOH, Best of Country Breads. Delicious!!

Carrot Cake

INGREDIENTS:
1 c vegetable oil
2 c sugar
3 eggs
1 8-oz can crushed pineapple, undrained
2 c shredded carrots
2 t vanilla
3 c flour
1 t salt
1 t baking soda
1 t cinnamon
1/4 t Allspice (my addition)
1/4 t Nutmeg (my addition)
1 c raisins (I omitted)
1 c chopped walnuts or pecans

DIRECTIONS: preheat oven to 350°
Combine all dry ingrediants together in small bowl, wisk gently, set aside. Combine all wet ingrediants together in Large bowl, beat well. Add dry ingrediants to wet in large bowl and beat until well blended. Bake in a greased 13 X 9 pan at 350° for 45-50 minutes, or until a toothpick comes out clean from the center. Let cool completely, then frost. (see recipe below)

RECIPE BACKSTORY: This is an excellent Carrot cake, our favorite! 4boysmom from TOH said she made this cake for her & her husbands wedding cake ~~~

Cream Cheese Frosting

INGREDIENTS:
1 - 8 oz. pkg. Cream Cheese (room temp.)
1 Stick Butter (room Temp.)
1 t. Vanilla
1 lb. box Powdered Sugar

DIRECTIONS: At room temperature, blend together cream cheese & butter. Add vanilla & blend. Gradually add powder sugar and blend. If you want a stiffer frosting, add more powdered sugar until you get the consistancy desired.
Frost your cake....

RECIPE BACKSTORY: Frost any cake with this, carrot cake, spice, chocolate or a yellow cake. What ever kind of cake you choose, this delicious frosting will top it. This recipe couldn't be easier...

Tamponade - Olive

Description:
This recipe from my daughter Jamie. If you like olives you will LOVE this spread. Easy to put together and easy to pack along for a get together :) Yummo!!!!

Ingredients:
1 cup Calamata Olives - drained
1 cup Green Olives - drained
1 cup Roasted Red Peppers - drained
2 cloves Garlic
2 T. fresh parsely (or) 2 t. dried
1 T. Italian Seasoning

Directions:
Throw it all into a food processor and chop. Mix well, store in refrigerator...

Serve with toasted baguette slices or assorted crackers...

Mexican Fudge

Description:
This recipe from Jamie... Yummo!!

Ingredients:
1 lb shredded monterey jack
1 lb shredded cheddar or other pizza/taco/mexican blend
1 large can evaporated milk
2 eggs
½ cup flour

Directions:
Using 9x13 pan, pack cheese on bottom. Mix evaported milk, eggs and flour in small bowl and pour over cheese. Bake at 350 for 40 minutes. Cool 5 minutes. Cut into 1inch squares and serve warm.

Great for taking, with the coming holidays ~

"Bloody Mary Rice"

Description:
Got this recipe from a friend a while back. Might have to finally give it a go this week! :) Sounds great!

Ingredients:
12 oz Bloody Mary Mix
Couple of dashes of Frank's Hot Sauce
1 tablespoons Butter
1 teaspoon chopped Garlic
1/2 cup chopped Onion
2 stalks Celery, chopped
1 cup Brown Rice
Green Olives, chopped (optional)

Directions:
In medium saucepan, combine Bloody Mary Mix, 1-cup water, hot sauce, butter, garlic, onion and celery and bring to a boil. Add rice, reduce heat to simmer, cover and cook for about 25 minutes or until all the liquid is absorbed.
You can add sliced sausages or chopped ham if you like.

Top with Green Olives if desired

Chocolate Eclairs

Servings: 12

INGREDIENTS:
1 lb. box Graham Crackers (use 2 pkgs.)
2 small boxes French Vanilla Pudding (instant)
3 cups Milk
1 tub Cool Whip

Frosting:
2 oz. Nestle pre-melted choco bake (unsweetenend)
2 T. Butter, melted
1/4 c. Light Karo Syrup
1 t. Vanilla
3 T. Milk
1 1/2 c. Powdered Sugar

DIRECTIONS:
Mix pudding with 3 c. milk, let set up, then fold in cool whip.
In 9x13 cake dish, layer, starting and ending with graham crackers. (Start by covering the bottom of cake dish with a layer of crackers.)
Then add 1/2 the pudding mixture, layer of crackers, rest of pudding mixture and the last layer of crackers.

Frosting: In Medium bowl add soft choco bake, butter, syrup and vanilla, beat with mixer. Add 1/2 the powdered sugar and 1/2 the milk and beat with mixer again. Add rest of powdered sugar and milk, beat again. Spread frosting on top of crackers.
Keep in refrigerator.

RECIPE BACKSTORY: A deffinate all time favorite. The kids are going to love this recipe too!

Personalized Fans



I made this double sided fan to give to everyone who came to my daughters baby shower. I made 30 of them on card stock with extra large popsicle sticks or tongue depressers. I made a templet first, taping everthing to a piece of clean white paper. Then scanned that to the printer loaded with card stock. Then it was rounding the corners of the card stock and gluing the wooden stick to one side and then the other. I punched wholes on each corner and attached a pink ribbon. I used my daughters wedding pic, the babys sonogram pic and the words to the song "Arms Wide Open" by Creed. The other side of the fan are pics of my daughter and her husband as children...

The Rose Room Reunion October 11, 2008



Here are some of the ladies from The Rose Room on the TOH web site. We recently had our first reunion in Branson. From left to right: Me, Amy, Jeanne, Pat, Laura and Marilyn... This was my first meeting in person with these ladies, although we have been friends posting in the Rose Room for years. Much fun was had and we hope this to be the first of many reunions to come :)

Mod Podge (Matt, not Gloss) photos to the box inside and out; let dry.
Give the whole box a coat or 2 of mod podge to seal the photos plus give the box a uniform look.

Note: Pick photos that are near & dear to the recipiants heart :)

T&T Spiced Olives

Preparation Time: 10

INGREDIENTS
1 - 7 oz. jar Pimento stuffed Olives
1/2 C. Tomatoe Juice or Bloody Mary Mix
1 T. Olive Oil
1/2 - 1 t. crushed Red Pepper flakes (I use 1 t.)
2 Garlic Cloves, minced
1/2 t. dried Basil
1/2 t. dried Oregano

DIRECTIONS
Drain olives, discard juice, then return olives to jar.
In a small bowl combine remaining ingrediants and mix well.
Pour over olives, cover and refrigerate for 3 - 10 days, turning jar over daily. Enjoy!
The olives will last a long time in your refrigerator

RECIPE BACKSTORY
These spiced green olives are Delicious! A wonderful addition to a Bloody Mary ;) or to just eat by themselves... Got this recipe from Dianae at TOH.

Scented Bath Salts

INGREDIENTS
3/4 C. Epsom Salt (found at Wal-Mart or your local drug store)
1/4 C. Baking Soda
1 1/2 C. Coarse Sea Salt (found at your grocery store)
10 drops of essential Oils (found at Wild Oats, GNC, etc.)
2-3 drops of Vegetable Food Coloring (if desired)

DIRECTIONS
In a large bowl, combine salts & baking soda. Add food coloring and desired scents. Stir mixture together until well blended. The drops of food coloring will break up and distribute throughout the salts. The food coloring will not stain your bath tub. It just gives the salts a pretty pastel color.
Pour salts through a funnel into large glass bottles. You can also make your own personal labels for your jars of bath salts.
These home made bath salts make great gifts... And don't forget to give yourself a jar. Add some to your bath water for a nice relaxing, soothing & scented bath.
They have some very nice Cruets at Wal-Mart that work out perfect for putting your bath salts in.

Number Of Servings: Depends on the size of your glass jars...
Preparation Time: Very quick and easy!

RECIPE BACKSTORY
This is a great fun & easy project that you can even do with the kids. Make these wonederful soothing, scented bath salts for gifts for the upcoming Holiday Season... This is a Martha Stewart recipe. She was on the Oprah Show and demonstrated how to make these bath salts....

Linguine with Kalamata Olives & Sun Dried Tomato

Cooking Time: 10-15 minutes
Servings: 4
Preparation Time: 10-15 minutes

INGREDIENTS
1 lb. Linguine
1/2 c. MEZZETTA Extra Virgin Olive Oil (I used a little less)
4 cloves minced garlic
1/4 tsp. hot pepper flakes (I added 1/2 tsp.)
1/2 Cup Red Onion, chopped
1/2 Red Bell Pepper, chopped
1/2 Green Bell Pepper, chopped
2 medium ripe tomatoes, chopped (I used 6 Roma tomatoes)
1/2 c. pitted MEZZETTA Calamata olives, chopped
1/4 cup MEZZETTA Sun Dried Tomatoes
1 tsp. salt (did not nead this much salt, olives are salty)
1/4 tsp. pepper
1/4 c. fresh basil, chopped
1/2 c. feta cheese

DIRECTIONS
I soaked my chopped sun dried tomatoes in olive oil (enough to just oil them up) for a 1/2 hour before cooking time.
In 1 large pot of boiling, salted water cook linguine for 8 to 10 minutes or until tender but firm drain well.
Meanwhile, in large skillet, heat half of the oil over medium heat cook garlic, hot pepper flakes, onion, & both peppers for 4 minutes.
Add fresh tomato and cook for additional for 3 to 4 minutes or until heated through.
Add sun dried tomatoes, olives & basil and heat through.
Spoon enough over pasta.
Top with crumbled feta cheese.

RECIPE BACKSTORY
I found this recipe on the Mezzetta web site. I tweaked it to my liking. I made it for dinner tonight and it was Delicious! One of my all time favorite pasta dishes!
